Studies show that when the Maillard reaction occurs during the heating (drying) of reactive sugars and amino acids or proteins, it produces a variety of products embedded in a very complex food or flavour matrix.
Gas chromatographic methods exist but analysis time is long, typically more than 90 minutes.
Agilent Technologies has demonstrated the procedure for converting an existing method using a fairly large column (30m x 0.25mm id) to a much smaller one (10m x 0.1mm id).
The converted method using the small column reduced analysis time to less than 25 minutes, a factor of 3.7, without losing resolution or changing compound elution order.
