Cambridge Reactor Design is working with the chefs at Heston Blumenthal’s experimental kitchen.
The chefs are evaluating CRD’s Polar Bear Advanced Cooling Technology at their kitchen in Bray.
The Polar Bear accurately delivers any temperature from 5 to -90C at the touch of a button.
Custom made moulds ensure good thermal transfer to the food being prepared.
The company said that initial results have been exciting and the chefs are impressed with the accurate temperature control that can be achieved and the speed of heat transfer.
Following good success with current recipes, the plan is to extend the evaluation by exploring the potential to design new menu items that could only be prepared using this enabling technology.
