CI Electronics says it has received endorsement for its Cisorp water sorption analyser from an internationally respected food scientist
Bronek Wedzicha, professor of food science at Leeds University, is currently using the Cisorp in a food link study into predictive modelling of food quality change, co-funded by Defra.
The project involves the study of the reaction of reducing sugars with amino acids during baking, and moisture content is a key element.
The moisture isotherms produced by the Cisorp are used to understand the relationship between moisture and texture in baked and toasted goods as well as the effects of preservatives on moisture content during storage.
Professor Wedzicha said: "The stable design, sensitivity and ease of use of the Cisorp allowed the project to gather and analyse this important data very easily.
"It is a useful tool for any food R and D department".
Cisorp is a fully automatic system designed for water sorption profiling of material samples weighing up to 10g.
Able to record weight changes of two samples at a time in identical conditions, the Cisorp can run unsupervised for hours or days.
Results can be viewed in real-time to provide instantaneous analysis.
Both the thermodynamic and kinetic analysis of the performance of materials can be provided.
With its small sample chamber and fast control response, CI says the Cisorp is particularly suited to kinetic analysis where rapid changes of relative humidity and temperature are required.
Cisorp is also suitable for studying water sorption in pharmaceuticals, detergents, building materials, fibres, wood as well as many other man-made or natural materials.
