Ametek Brookfield has published an application note detailing the use of its CT3 Texture Analyser to measure the firmness of Fromage Frais using a cylinder probe.
Fromage Frais is a fresh cheese in which the curds are not solidified but stirred - giving it a smooth soft texture that is similar to yoghurt. Texture analysis of Fromage Frais is necessary in order to predict the final product quality.
The cylinder probe of the CT3 Texture Analyser was used to penetrate a sample within the detailed case, and the resistance to deformation by the applied stress was measured. The maximum force applied on the sample over a specified distance was a measure of sample firmness.
